There are a few different cuts to choose from when buying salmon. A smoked salmon steaks cut is made perpendicularly to the spine, which slices through the bone and creates a splay shape almost like wings. Salmon fillets are cut parallel to the spine, and they are usually thinner than a steak cut.

Other larger fish, like mahi-mahi, cod, swordfish, and tuna can be cut into steaks, just like salmon, but this cut does not work for smaller fish.

Some people claim that bone-in fish, like salmon steaks, taste better than cuts without bone. Salmon fillets might still have tiny pin bones that need to be removed, but salmon steaks will have the central bone left in the cut.

A larger cut is less likely to dry out and will stay tender and moist, whereas a thin fillet or slices can dry out easily. A salmon steak is less likely to fall apart while preparing due to its sheer size, and the lack of handling, or increased cutting and processing, means that the salmon steak is likely fresher than its thinly sliced counterparts.

A salmon fillet is best for customers looking for faster, convenient dinner, perhaps a low-stress option for a weeknight meal. Though salmon steaks are just as easy to prepare, serving a salmon steak increases presentation quality, making for an unforgettable dinner party or at the very least some compliments from your guests. Salmon steak can be served in its entirety, giving guests the freedom to choose just how much they would like to take. Pre-portioned cuts, like fillets, have their purpose in specific serving sizes, but imagine the fun of deciding and sharing right on the spot with a steak cut.

Purchasing & Shipping Smoked Salmon Steaks

Salmon steaks might not be as widely available as salmon fillets, but they are worth the buy when you find them! The cuts will be frozen and then vacuum sealed for delivery.

The steaks are typically measured in 8-to-16-ounce cuts and sold by the pound. The amount of per-pound purchase depends on the company. Some will only sell salmon steaks in orders of 8 pounds or more, while others allow the customer to order by steak rather than by pound. The price of salmon steak ranges from about $8 per pound to almost $30. The type of salmon and company you purchase from will affect the price.

Preparing Smoked Salmon Steaks at Home

Smoked salmon steaks can be pan fried, baked, or grilled. Some companies will remove the bone before shipping, but you can also choose to remove the bone yourself before cooking, if necessary. Use a broad-sided bone tweezer to remove any unwanted bones.

Because the cuts are served whole, it can be fun to get creative with serving. Salmon steaks can be topped with all sorts of lovely things. Some suggestions include cucumber, radish, or fennel shavings, toasted nuts, or herbs. Serve with a dressed salad, and you are sure to please your dinner party guests!
