The dinner party you hosted last night was a success and the halibut that you prepared was a hit, right? Except you ordered more than you realized at the time and now you are left with a couple of pounds of halibut and no ideas on how to use them.

There are some simple and creative recipes for halibut meat that are sure to satisfy any halibut lover’s palette. These are some of our favorites.

Halibut & Potato Chowder

When it comes to preparing the dish, Halibut & Potato Chowder uses much of what you already likely have in your kitchen. The recipe calls for ingredients such as 1 pound of halibut meat cut into 1-inch pieces, 1 can (14-½ ounces) of chicken broth, 4 celery ribs (chopped), and 3 medium potatoes (peeled and chopped).

The preparation time is 25 minutes. Cooking is estimated to take 30 minutes. The meal offers 12 servings (3 quarts).

Halibut Cakes (Croquettes)

Halibut Cakes are an offbeat, unique way to use that leftover halibut meat rather than letting it go to waste. The primary ingredients for the recipe include: 1 pound skinless, boneless halibut fillets, 3/4 cup panko bread crumbs, 1 cup shredded Italian cheese blend, 1 egg, and 1/4 cup mayonnaise.

The total time is 43 minutes, with 20 minutes of preparation and 18 minutes for cooking. If the recipe provided is followed, the end result will be six halibut cakes.

Cheesy Halibut Dip

If you are having a small gathering of friends over to your house and are looking for a quick, but interesting dip, Cheesy Halibut Dip may be the perfect cooking adventure. The dip calls for only a few ingredients, among which include: 2 pounds of halibut, 2 medium cans (or 4 small cans) of chopped green chilies, 8 ounces of cream cheese, and 1 cup of shredded cheddar cheese.

When it comes time to fry or cook your halibut, do either in a decent amount of butter. The goal is for the halibut to flake or fall apart, and then you can drain the leftover juices. When it comes to the point of adding the rest of your ingredients, using a crock pot is recommended. First you will add the other ingredients on top of the cooked halibut meat. Then, all that is needed going forward is that you monitor the temperature and stir when appropriate.

Adding Johnny’s seasoning salt or minced jalapeños to the final product will give it an extra kick.

Grilled Halibut Salad Niçoise

If you enjoy spending a little extra time in the kitchen, Grilled Halibut Salad Niçoise is the perfect recipe to explore. The dish is typically prepared with tuna, but the halibut variation can serve six and is considered “heart healthy.” The total cooking experience will take 1 hour and 30 minutes.

The ingredients for the salad include: 1 pound of Pacific halibut, 1 large head of Boston lettuce, 1-¼ pounds green beans (trimmed), and 1-½ pounds of red potatoes (5-6 medium), scrubbed and halved.
